A lye is an alkali metal hydroxide traditionally obtained by leaching wood ashes, or a strong alkali which is highly soluble in water producing caustic basic solutions.
“Lye” most commonly refers to sodium hydroxide, but historically has been used for potassium hydroxide.

What is Lye used for In Uganda?
Lye water is an ingredient used in African cooking for cooking meat, rice or noodles and vegetables like corn,
beans, maize or okra to soften or add flavor or keep vegetables color. It is usually added as part of the recipe in small amounts (spoonful’s).
