How To Make Mandazi Uganda
Below is how Uganda’s Mandazi is prepared
Preparation
Weigh out the Flour, margarine and sugar
Add them in the saucepan
Crack the eggs and add in the pan
Mix everything together
Start adding the water slowly in the middle
Once the flour and everything come together, turn it onto a clean and dry worktop
Knead for 5 minutes or until the dough doesn’t stick to your hands anymore
Pinch a piece and test if it is easily breakable – if too soft and elastic, add more flour knead some more
Put it back in the saucepan and cover with the tea towel
Leave it to rise for 45 minutes.
Frying The Mandazis
Turn your cooker on and heat up the oil in a frying pan for 2 minutes
Roll out the dough and cut them in medium size pieces
Test the oil temperature by placing one raw mandazi piece into the oil. It should make some sizzling sound
Add the rest of the pieces
Allow one side to brown before turning over the other side
Adjust temperature accordingly. Don’t let them brown too fast as the middle will not cook well and avoid low temperature because, the mandazis will absorb too much oil.
Once golden brown, take them out and place on a large tray or container with a kitchen tissue in place to absorb the oil
Can Mandazi be kept in fridge?
Wrap the dough in some cling film and store in a tight-lidded container and freeze.
When you need to make the mandazis, take the dough out of the freezer and put it in the fridge overnight.
